With "all steel" we mean steel case, "steel like" hour markers (indexes) and logo - (probably of white gold) and  steel hands. We use this term because very many Omegas come with steel case and silver dial, but have gold colours on dial and hands. The mix of gold and silver is not so pleasant to the eye, and the relative scarcity of "all steel" vintage Omegas make them more valuable.

The same can be said about the "no date". The date function was a very popular "complication" in mechanical watches from the early fifties onwards. Therefore the cleaner "no date" versions are rarer. Today collector's often prefer the versions without the extra hole in the dial (date window). The Seamaster 30 did not come with a date option.
